Bitter nuts - Growing as a low lying shrub, the berries of this bush form hard outer shells and the pulp dries becoming like a nut meat during the winter. It is at this time that they can be made safe to eat - they must be shelled and then boiled to leech out the last of the toxins. While seldom eaten alone due to a lingering, slightly bitter flavor, they are an important ingredient in several Mounty dishes and desserts giving them a uniquely robust flavor.
